If you’re looking to switch up your diet a bit and substitute some unhealthy, high carb items for more responsible choices, there is a key ingredient you may not have considered…but should. Cauliflower!  That’s right, this wonder veggie is great for swapping unhealthy ingredients while retaining taste.  Consider some of these tasty recipe options worth a try.

Everything bagels

You will need the following ingredients: 1 head of cauliflower, riced (about 3 cups); 2 tablespoons of almond flour; 1 tablespoon of coconut flour; 2 eggs; ½ teaspoon of garlic powder; ¼ teaspoon of fine sea salt; ½ teaspoon of poppy seeds; 1 tablespoon of sesame seeds; 1 teaspoon of dried minced garlic; 1 tablespoon of minced onion; ½ teaspoon of coarse sea salt.  Preheat oven to 400°F and line a baking sheet.  In a food processor, grate cauliflower until it reaches a rice consistency.  In a bowl combine eggs, cauliflower rice, almond flour, coconut flour, garlic powder, and salt.  In a separate bowl combine topping ingredients.  Roll cauliflower mixture into evenly sized balls and lay onto the baking sheet.  Sprinkle on the topping and bake for about thirty minutes.

Mac ‘n Cheese

For this one, you will need 5 cups raw cauliflower florets; sea salt and pepper to taste; 1 cup coconut milk, canned; ½ cup homemade broth; 2 tablespoon of coconut flour, sifted; 1 egg, beaten; 2 cups of grated cheddar cheese.  Preheat the oven to 350°F.  Salt the cauliflower then steam it until it’s al dente.  Place onto a greased baking dish and set aside.  In a skillet, heat the coconut milk with salt and pepper over medium heat.  Add the broth and stir.  Then, add the coconut flour and let the sauce bubble.  Remove from heat and whisk in the egg.  Pour over the cauliflower after it thickens.  Add the cheese evenly on top and bake for 35-40 minutes.

Hummus

The perfect pairing for some low-fat chips or pretzels!  You will need 2 cups of steamed cauliflower; 2 tablespoons of almond butter; 2 garlic cloves; 1 teaspoon of red pepper flakes; 3 tablespoons of olive oil; a pinch of sea salt; a splash of lemon juice.  Just place in a food processor and it’s done!
